<p><strong>Ingredients</strong></p><ul><li>1/2 pound simmered seitan (225g)</li><li>1 tablespoon mustard</li><li>1 tablespoon olive oil</li><li>1 cup Panko breadcrumbs</li><li>1/4 teaspoon seasoned salt </li><li>Spray oil</li></ul><p><br></p><p><strong>Instructions</strong></p><ol><li>Spray a baking sheet with oil or brush lightly with oil. Set oven to 400°F/200°C</li><li>Drain liquid from seitan. If not already sized like chicken nuggets, cut your gluten into pieces about 1”-2”. Place in a bowl with the mustard and mix around to coat each piece.</li><li>Combine crumbs and seasoning salt in another bowl.</li><li>Roll each piece in crumbs to coat, pressing them to stick.</li><li>Lay in a single layer on the baking sheet and spray the tops with oil, as well.</li><li>Bake 25 minutes (but if you have kids clamoring for dinner right now, then 10 minutes will do fine.)</li></ol><p><br></p><p>Makes 15-16 nuggets. Serves 3.</p>
