<p><strong>Ingredients</strong></p><ul><li>1 cup cooked brown or black rice (140 g)</li><li>1 cup minced roasted beets (140 g)</li><li>1 tablespoon tahini</li><li>1/4 cup grated mild cheese (2 ounces/ 60 g) </li><li>2 tablespoons minced fresh herbs</li><li>1 egg</li><li>1/4 cup minced onion</li><li>1/4 teaspoon salt</li><li>1/4 teaspoon black pepper </li><li>1-2 tablespoons flour</li><li>1 tablespoon butter</li></ul><p><br></p><p><strong>Instructions</strong></p><ol><li>Set oven to 350°F/175°C </li><li>Combine all ingredients except butter in a large bowl and mix well. </li><li>Wet your hands and roll into balls (16) by heaping tablespoon. </li><li>Melt butter in a large skillet over medium heat and brown the balls on all sides, rolling gently, for a couple minutes. </li><li>Place skillet in oven and bake 10 minutes until firm.</li></ol><p><br></p><p>Makes 16 beet balls. Serves 2-4.</p>
