<p><strong>Ingredients</strong></p><ul><li>1 cup grated potato (about 5 oz/ 150 g)</li><li>2 cups grated cauliflower (about 10 oz/300 g)</li><li>1/2 small onion, minced</li><li>1 clove garlic, minced</li><li>1 tablespoon minced serrano or jalapeño pepper</li><li>1/4 cup crumbled feta (optional but delicious!)</li><li>1/4 cup flour</li><li>2 eggs</li><li>1/2 teaspoon salt</li><li>1/4 teaspoon pepper</li><li>1/4 cup oil for cooking</li></ul><p><br></p><p><strong>Instructions</strong></p><ol><li>Combine potato through pepper ingredients.</li><li>Heat a tablespoon of the oil on a large griddle over medium heat and scoop mixture by the 1/4 cup measure. Form into patties about 4 inches across.</li><li>Cook for 2 minutes on each side, or until browned and firm. Add more oil if necessary when flipping.</li><li>Keep latkes warm in the oven while you cook the second batch.</li></ol><p><br></p><p>Makes 8 latkes. Serves 2.</p>
